A coin that does this says so on its token panel, on the line above its stats:
The percentage is set by the coin, and it applies to your trades in it — buys and sells both.
Collecting it
You do nothing. Dawn claims what you are owed for you, and pays the network fee to do it.
When a claim lands you get a card in the chat with the amount and a link to the transaction.
SOL landing in the wallet rather than on the balance is the usual case. It is real money either way; it just needs one tap before you can spend it in Dawn.
How it stacks up
These rewards are independent and they add together:
A coin paying cashback is not a coin worth buying. The rate is a launch parameter anyone can set, and it is a rounding error next to what the price can do. Judge the coin on everything else on its panel first.
